Stuffed Savory Pancake Recipe
Makes 3 to 4 servings

2 cups rice flour
4 egg yolks
3⁄4 cup water
1⁄4 cup finely chopped green onions
1 teaspoon sugar
pinch of salt
oil for frying
1⁄4 kilo cooked shrimp
1⁄4 kilo cooked and thinly sliced pork
1 cup thinly sliced cucumber
2 cups bean sprouts
1 teaspoon Vietnamese fish sauce
1⁄2 cup chopped fresh cilantro
1⁄4 cup chopped fresh basil
1 In a bowl, mix flour and egg yolk while adding enough water to make a thick pancake-like batter. Add green onions, sugar, and salt. Stir.
2 In a nonstick pan, heat enough oil to cover the bottom of the pan. Pour 3⁄4 cup of batter and tilt the pan to spread batter. Cook for a couple of minutes.
3 On half of the pancake surface, put shrimp, sliced pork, cucumber and bean sprouts. Season with fish sauce. Flip the other half on top of the filling. Cover the pan for about 3 to 4 minutes.
4 Transfer pancake onto a plate. Garnish with cilantro and basil.
