Chicken Quesadilla with Peppers Recipe

Makes 5 to 6 servings

1⁄4 kilo boneless chicken breast, diced
1 packet (1.25 oz) fajita seasoning mix
3 tablespoons oil
1 medium onion, sliced
1 piece each of green, red, and yellow bell peppers, sliced thinly
1⁄2 cup melted butter
10 pieces flour or wheat tortillas
1 cup grated cheddar cheese
1 Coat chicken pieces with fajita seasoning mix.
2 In a heated pan, add 2 tablespoons oil and pan-fry chicken on medium-high heat for about 8 to 10 minutes. Set aside.
3 In the same pan, add remaining oil and sauté onions until translucent. Add bell peppers and cook for a few minutes, stirring constantly. When the vegetables have softened, add cooked chicken. Stir.
4 Preheat oven to 350°F.
5 Line baking sheet with parchment paper or greased foil. Butter one side of the tortilla. Lay this on the baking sheet, buttered side up. Spread chicken-bell peppers mixture on the tortilla and top with grated cheese.
6 Butter another piece of tortilla, this time, brushing both sides. Lay this tortilla on top of the filling.
7 Bake quesadillas in the oven until cheese melts, about 8 minutes.
8 Repeat with the rest of the tortillas. Slice into wedges before serving.
