Chicken Quesadilla with Peppers Recipe

A fun Mexican food night should always involve quesadillas.

Makes 5 to 6 servings
Cooking time 25 minutes


1⁄4 kilo boneless chicken breast, diced
1 packet (1.25 oz) fajita seasoning mix
3 tablespoons oil
1 medium onion, sliced
1 piece each of green, red, and yellow bell peppers, sliced thinly
1⁄2 cup melted butter
10 pieces flour or wheat tortillas
1 cup grated cheddar cheese

 
Coat chicken pieces with fajita seasoning mix.

In a heated pan, add 2 tablespoons oil and pan-fry chicken on medium-high heat for about 8 to 10 minutes. Set aside.

In the same pan, add remaining oil and sauté onions until translucent. Add bell peppers and cook for a few minutes, stirring constantly. When the vegetables have softened, add cooked chicken. Stir.

Preheat oven to 350°F.

5 Line baking sheet with parchment paper or greased foil. Butter one side of the tortilla. Lay this on the baking sheet, buttered side up. Spread chicken-bell peppers mixture on the tortilla and top with grated cheese.

Butter another piece of tortilla, this time, brushing both sides. Lay this tortilla on top of the filling.

Bake quesadillas in the oven until cheese melts, about 8 minutes.

Repeat with the rest of the tortillas. Slice into wedges before serving.
